                                Episode 6083: Ultimate Holiday
                                Holiday Drinks
                                Dress it up!
One of the things I most enjoy about the holiday season is the opportunity to lift a glass to the well-being of friends and family. With that in mind we asked Jeff Sansone, bartender at Canoe Restaurant in Toronto, for a few recipes on the ultimate holiday drinks. Wait until you try these lively holiday libations, superb!

                                • 1 dozen eggs, separated
                                • ½ tsp salt
                                • 2 ¼ cups sugar
                                • 2 cups white rum
                                • ½ cup rum
                                • 1 quart milk (add another pint of milk if not using liquor)
                                • 2 tbsp vanilla
                                • 3 pints heavy cream
                                • Nutmeg
Beat together the egg yolks and salt in a large mixing bowl, slowly adding
1 ½ cups of the sugar, until thick.
Stir in the rum, milk and vanilla until well mixed.
Beat the egg whites until foamy, and slowly add the remaining 3/4 cup sugar, continuing to beat until stiff and all the sugar has been incorporated.
Whip the cream until stiff, then fold the egg whites into the yolk mixture and then fold in the whipped cream. Taste and add more rum and/or sugar if necessary.
Pour into a punch bowl and sprinkle with nutmeg.
Refrigerate until ready to serve. As with any egg product, if the eggnog sits out throw it away to avoid the possibility of salmonella!

                                Christmas Cosmopolitan

                                • Ice
                                • Tangerine liqueur (you can use any orange flavoured vodka)
                                • Fresh cranberry juice
                                • Fresh honey tangerine juice
                                • Kumquat
                                • Fresh cranberries
The key to a good martini is that it be cold, so start with a nice scoop of ice, then add tangerine liqueur, cranberry juice, and tangerine juice, using more cranberry than tangerine.
Shake it up, and serve, garnishing it with festive kebabs made of kumquat and cranberries.

                                Yuletide Infusion

                                • Pomegranates, sliced
                                • Honey tangerines
                                • Dried cranberries
                                • Vodka
Fill container to top with pomegranates, tangerines and dried cranberries. Pour vodka over it, until the vodka covers the fruit. Let sit for at least three days.
Strain the vodka, then bottle it up. Serve it to guests in frosted glasses.
Makes a great gift as well!
